Known for its ability to withstand temp changes without going to bolt. Spinach is a cool weather vegetable. You can get several plantings in most areas of the country. Plant in early spring as soon as the ground can be worked. Giant Nobel grows fast, so you can get a few plantings in before the heat of mid-summer.
